Cul Sec is the alcohol-free alternative to wine: a maceration of wild herbs, wine grapes and ferments. This bottle is full of old traditions combined with new techniques. Cuvée 2025 balances ripe oxidised and unripe wine grapes, full of fresh acidity and tannin. All year long, the makers searched our landscape for wild flavour notes: the mineral notes of oyster shell as a chalky ‘terroir’, different woods for firm tannins and, for example, oxidative notes from lacto-fermented fruit. With this palette of flavour we’re building ‘Domaine Cul Sec’, an estate full of wilderness and regeneration. Santé! For anyone looking for flavour and texture without the alcohol.

cuvée 2025 is there!

Proudly we announce your: Cuvée 2025 is available! Interested to sell or serve in your restaurant? Send your message to: fleur@fruitslagers.nl - This year we worked on new stuff—not really new recipes, but more like new ingredients. We’ve always started from ingredients, and the recipes are something that naturally emerge from them. It’s not as if you “invent” a recipe, so to speak. This year we have many new ingredients. Our base is grapes, coming from new places, new harvests, and new pressing techniques. We experimented with all of these ingredients. For example, this year we use verjus, which means the acidity comes from unripe grapes. Last year, we relied more on gooseberry and Japanese quince for acidity. We explored the tannins that unripe grapes can give us, the sourness that comes from them, and all those different varieties, sourced from different places: some grapes from France (Ardèche), some harvested in Germany (Kitzingen), and some coming our way from Hungary.

Grapes

Grapes

For the 2025 cuvée we travelled across Europe in search of the perfect grape for alcohol-free. We found floral notes in Germany, fresh acidity in Hungary and full, sweet grapes in the south of France. With the biodynamic farmers we met, we also discovered the fresh acidity of unripe grapes. Farmers pick the unripe bunches to make room for sun-ripened bunches full of sugar. We gratefully make use of what gets in the winemaker’s way: fresh verjus from young grapes. A natural acidity that’s perfect for Cul Sec. More and more vineyards are popping up in the Netherlands, perhaps with the perfect grape for alcohol-free wine. You’ll already find them in this cuvée, and with Cul Sec we dream of growing Dutch organic grape cultivation.

Alternative to wine

Alternative to wine

We missed the robust alcohol-free flavours and textures we found in wild nature. For years we played with the flavours of our wild landscape. Fermenting roots, infusing seeds, dissolving oyster shells: Cul Sec creates a challenging terroir for the tongue. With minerals and powerful ingredients we create a full and complex texture and mouthfeel. A combination of long research and the fruitslagers’ playground, in a bottle. A worthy alternative to wine, with an eye for the flavours around us. For anyone looking for flavour without the alcohol.

Landscape restoration and terroir

Landscape restoration and terroir

Our search for flavour starts in the landscape around us. We’re building a regenerative system together with farmers and growers. The knowledge, care and time they put into the ingredients, we translate into a complex product full of flavour and texture. The Dutch herbal hay in L’étable Fumé is grown at Schevichoven, the green aromas of blackcurrant leaf from De Nieuwe Bodem fill Rouge en Voiture, and oak from Lanou Lanou provides the tannins. We love being surprised by new varieties, and we let old traditions and new techniques loose in search of intense flavours, textures and mouthfeel. Drink Cul Sec to restore our local landscape.

Tempeh au vin and L'étable Fumé

Tempeh au vin and L'étable Fumé

A plant-based alternative. Boonzaak’s tempeh made from the Dutch krombek bean has a slightly salty flavour and shows off how versatile tempeh can be, which is why it pairs so well with briny flavours. The krombek is one of the oldest Dutch bean varieties, grown mainly in Friesland, Groningen & North Holland. Ours come from the Smak family. Served with a wine sauce based on yellow wine (vin jaune), and a nod in the title to the classic Coq au Vin, only plant-based!

Blossom season and Balade Minérale

Blossom season and Balade Minérale

White asparagus season goes hand in hand with a parade of blossoms. From early cherry and hawthorn blossom and wild garlic flowers to mustard flowers, borage and the first roses. The magnolia beurre blanc has just been succeeded by the last elderflowers. We capture the flavours in vinegar, sugar, alcohol, oil or salt, so we can use them for another whole year. Because flowers aren’t just beautiful: they hold remarkable flavours that we would normally import.

Tomato season and Souris sous la Rhubarbe

Tomato season and Souris sous la Rhubarbe

A variety of perfectly ripe tomatoes: raw, pickled in a strawberry vinegar, and fermented as a gazpacho. The tomatoes come from Spruitje Greens. Served with some pangrattato made from yesterday’s bread, Mexican tarragon (yes, from the Netherlands) and elderberry capers. Can be a little spicy.

Tempeh au vin and Rouge en Voiture

Tempeh au vin and Rouge en Voiture

The herbal, earthy, structured character of Rouge en Voiture works beautifully with a lentil stew. The dish also features hazelnut cream, bay leaf oil and pumpkin: sweet and aromatic flavours that pair wonderfully with the wine.
