Products

Frisian Woudboon tempeh

Our Frisian Woudbonen come from Jan Steverink in Silvolde and the Smak family in Lutjewinkel. It’s a creamy, slightly salty bean, perfect as the backbone of wintry dishes, classically eaten as Fryske Wâldbeantsjes with bacon and vinegar. We honestly eat it with everything, but do try it with hete bliksem (potato and apple mash), a beurre blanc sauce or in a pita with salsa verde.

Krombek tempeh

The North Holland white Krombek bean is one of the few Dutch white bean varieties still around in the Netherlands, mostly grown in the very north of North Holland. It’s a cream-white, kidney-shaped bean with a lovely soft, creamy flavour. Fermentation adds a briny note too.

Schokker tempeh

The Schokker* is a beautiful wrinkled green pea with a creamy flavour, just a touch sweeter than a regular green pea. This tempeh has a good bite and is a bit more compact than the grey pea, which makes it very versatile. *Temporarily sold out

Healthy protein from minimally processed beans

Healthy protein from minimally processed beans

Beans and a little mycelium. That’s it. Tempeh is a natural source of vitamins, fibre and protein that your body absorbs easily. Thanks to fermentation, these nutrients become even more digestible. We believe the protein transition can go hand in hand with gastronomy – without jumping on the ultra-processed food bandwagon. Pure, local and full of flavour.

Unique flavours: this is how good local beans taste

Unique flavours: this is how good local beans taste

Lemon bean, Frisian woudboon, Schokker: every bean has its own flavour profile and texture that makes the tempeh unique. Tender, crispy outside and creamy inside. Fermentation unlocks complex flavours from the beans, so this tempeh needs very little: the entrecôte of the plant kingdom.

Tempeh

Tempeh

Tempe(h) comes from Java in Indonesia, where it’s an everyday staple. It’s a fermented cake made mainly of beans, grains and nuts. The moulds occur naturally on Java, and the fermentation technique has been perfected there. Tempeh has long been made from all sorts of ingredients. The name ‘tempeh’ refers to both the technique and the end product. The “h” at the end was added in the West to avoid confusion about the pronunciation.

Good for soil and farmer: biodiversity on your plate

Good for soil and farmer: biodiversity on your plate

Boonzaak brings biodiversity back to the plate and lets you taste how delicious local beans are. Bean plants are exactly what we need right now: they fix nitrogen, make soil life healthier, and by growing them for people to eat we preserve these beautiful varieties. The farmer can earn more from them too, because they end up straight in our mouths rather than in livestock feed or other uses.

The blini of the Low Countries. Our very own krombek is creamy, yet still fries up crispy. Fried briefly, it has the doughy texture of a blini or banana bread. Also lovely in a sandwich, mild in flavour and even great in sweet dishes. Our organic krombek beans are grown by farmer Jos Lamers between Lobith and Herwen.

Grey pea over fire

Grey pea over fire

Grey pea tempeh - confit leek - BBQ lemon - spruce oil
